Let's start preparing the dough with the activation of yeast. Yeast pour 1/3 tbsp. water at room temperature, add 1 tsp. sugar and mix. Leave the mixture for 10-15 minutes. During this time, a "cap" should form on the surface.
Step 3:
Combine kefir with vegetable oil, mix. The mixture with constant stirring is slightly heated over low heat (up to about 38 degrees). Be careful not to overheat the mixture, otherwise the kefir may curdle.
Step 4:
Remove the warm kefir-oil mixture from the heat, add salt, sugar, mix.
Step 5:
Add activated yeast, mix.
Step 6:
Pour in the sifted flour. Flour may need a little more. Depends on its quality.
Step 7:
Knead a soft, elastic dough. It turns out to be gentle, practically does not stick to your hands. Cover the dough with a napkin and leave in a warm place to rise for about 40-45 minutes.
Step 8:
Meanwhile, we prepare the filling.
Step 9:
Peel the apples from the seeds and peel, cut into small cubes. Mix with washed and steamed raisins, cinnamon and sugar. The filling is ready.

The dough has risen well.

We carefully crumble the dough that has come up, put it on the table, powdered with flour. Divide into pieces of the desired size.
Step 12:
We roll out each piece into a round cake, put the filling in the middle. Carefully pinch the edges of the dough and give the pie the desired shape.
Step 13:
Spread the pies on a greased baking sheet, cover the top with a beaten egg. Let the pies stand for 10-15 minutes.
Step 14:
Bake in the oven at 180 degrees. to a ruddy color. Let the baking cool down a little and serve. Enjoy your meal!
Flour must be sifted well before use. You can do this twice to better enrich it with oxygen. The filling for pies can be both sweet and unsweetened.
