Cooking method
1. Mix premium wheat flour in dry form with high-speed yeast, sugar, ground turmeric and salt. There is no need to put any sourdough.
2. Add heated raw water, knead the dough to a thick, dense consistency, but not too tight. Yeast dough should not stick to your hands.
3. It turned out a beautiful yellow dough. Leave the dough for 20 minutes in a warm place. We check how well it fit.
4. While the dough is coming up, let's do potato minced meat with spices. Peel the potatoes, cut into small cubes.
5. We put the potatoes to cook, we make a minimum of water, less than the level of potatoes.
6. When cooking, add vegetable oil to potatoes, ground coriander and red pepper, you can also add cumin, but this is optional.
7. When the potatoes are made soft, it remains to mash them to a state of thick puree. If you get an extra liquid, it is better to drain it first. In the process, it will be possible to top up a little.
9. Green onions, which are easy to grow at home, cut into small pieces and add to the potato filling. Mix thoroughly.
10. The dough has already come up, increased in size, we cut it into balls, we make cakes of them about 80 millimeters in diameter.
11. Lay out the minced meat in the center of the circles, leaving the fields for gluing.
12. We collect the edges according to the type of bag, glue the dough, turn the seam down. Spread out on a baking sheet. I got 17 pieces.
13. Bake in the oven. I have an electric oven, I set the baking mode to 250 degrees in it. I switch the heating to the top and bottom. The pies begin to blush after 12 minutes, I switch to ventilation with top heating. The pies are baked evenly on top and very quickly.
14. Remove from the oven. I also smear, with the help of a brush, the crust of the pies with sweet syrup. Not everyone will like this combination. But they became soft and shiny.
