    The mixture boils. Then it will be possible not to interfere constantly. Put a container of cold water at the ready, you will need it instead of a thermometer.

    Let the caramel cook a little, it will boil violently and turn slightly yellow. This will be the signal to make a trial. To do this, dip a wooden stick into boiling syrup for a second, take it out and immediately lower it into cold water. After dropping the stick into the water, quickly swirl it in the water to cool the caramel.

    Take out the wand and touch the caramel that has stuck to it. if it is soft and it is easy to flatten it, then it is necessary to cook further. If the caramel becomes hard after the water, then it is ready. Mine in this photo is still a little plastic. I cook further.

    Now you can see by the color that the caramel should be ready. The water sample gave a positive result - the caramel ball on the stick became solid almost immediately. Turn off the fire.

Such caramel can be made multicolored by adding food dyes to the syrup or taking fruit juice instead of water.
