Cooking method
1. Put the yeast in a bowl, pour sugar, pour warm water, leave for 15 minutes until the foam cap appears.
2. Meanwhile, pour rye flour, wheat and flaxseed flour, rye bran, and spices into a bowl: coriander, oregano, basil and paprika, do not forget to add salt.
3. When the reaction passes, pour the mixture of dry ingredients into a bowl with yeast and water, knead the dough. Knead for at least 10-15 minutes, since the structure of the dough differs from wheat and requires a little more attention.
4. Roll the dough into a ball, put it in a bowl, cover with a towel, leave for about 2 hours, let it fit.
5. We form buns from the dough, place them on a baking sheet lined with parchment, send them to the oven preheated to 230 degrees, bake for 10-15 minutes until the crust sets, then reduce the temperature to 190 degrees and continue baking for another 5-10 minutes.
The buns turned out just great!
Bon appetit!
