Cooking method
To start, grate the onion on a coarse grater.
I put the washed and dried shins in a convenient bowl, add onions to them, pass garlic through the press, add all the spices, vegetable oil, lemon juice, salt to taste and mix well with my hands.
I cover the shins with cling film and put them in a moderately warm place for 2 hours. You can leave it overnight in the refrigerator.
After the right time, I lubricate the baking dish with vegetable oil, spread the pickled shins, cover with foil and send them to the oven preheated to 200 degrees for 40-45 minutes.
To form a golden crust, 5-10 minutes before readiness, I remove the foil and continue to cook until ruddy.
