Soy flour sponge cake

Delicious, sweet, airy sponge cake made of two types of flour! I really like this version of a biscuit - you can bake a cake for the arrival of guests, and just serve it to your family for evening tea with jam or honey. And I sometimes cook such a biscuit for children for breakfast before school, you can even take a piece with you instead of sandwiches or school buns.

The process of making a biscuit from soy flour is the same as in the classic version:

1. First, we separate the egg yolks from the whites.

2. Beat the yolks with sugar into a foam.

3. Add grated zest (or vanilla) to the yolks and mix. Add water and mix again.

4. Then whisk the whites.

5. To the yolks, add a spoonful of proteins, mix.

6. In the total egg mass, sift a mixture of soy and wheat flour in portions and stir again.

7. Bake until ready in the oven at 180 degrees (about 15 minutes).
