Lamb and fennel pie

Cooking method

Cooking time: 2 h 25 min

1. The butter intended for the dough should be cut into small cubes.
2. Sift flour, mix it with salt, add butter cubes and chop them together with flour into crumbs.
3. Put yogurt, yolks, mix everything. Knead the dough. If it turns out too steep, pour a little ice water.
4. Form a ball of dough, wrap it with cling film, put it in the refrigerator for 30 minutes.
5. Roll out the dough into a layer 5 cm larger than the baking dish, then transfer this layer to a form lined with parchment, creating sides. Remove the mold with the base from the dough for 30 minutes in the refrigerator.
6. Put a piece of parchment on top of the base, pour the beans and bake for 20 minutes in the oven (180 degrees). Then remove the cargo and parchment, let the base cool down a little.
7. Cut the fennel into plates, put it in a frying pan heated with butter and fry until golden on both sides.
8. Pre-cleaned, washed and dried fish, season with salt and pepper, brush with olive oil.
9. Mix eggs with cream, whisk, then add parmesan. Pour the resulting mixture into the base for the pie, put it in the oven for 10 minutes (180 degrees).
10. Remove the mold from the oven, put the fish and fennel on top of the pie. Put it back to bake - for 15 minutes.
