Homemade coconut milk ice cream

Treat yourself and your family to natural coconut ice cream. The other day I made this unusual ice cream with coconut milk and shredded coconut. It's remarkably easy to put together — and you end up with about 1 3/4 pounds (800 g) of delicious dessert.

Cooking method

    Gather your ingredients. For homemade coconut-milk ice cream you'll need: coconut milk, heavy whipping cream (33-35% fat), sugar, egg yolks, and shredded coconut (optional).

    In a heavy-bottomed saucepan, combine the coconut milk, sugar, and yolks, and stir. The mixture will look gray at first — don't worry. As you go, the color evens out into a soft beige.

    Set the saucepan over low heat, or use a double boiler. Stirring constantly, cook the custard until it thickens, about 10 to 15 minutes.

    Take the finished coconut custard off the heat, press a piece of plastic wrap directly onto its surface, and let it cool. To speed things up, set the saucepan in a bowl of cold water.

    Whip the cold heavy cream with a mixer into firm, billowy peaks.

    Pour the cooled coconut custard into the whipped cream and fold everything together until smooth.

    Add the shredded coconut (optional) and stir again.

    Transfer the mixture to a deep container and put it in the freezer. If you can, stir it thoroughly 5 or 6 times, once every 30 minutes — that keeps ice crystals from forming.

  • First, let's clear up the terms. Coconut milk isn't the liquid that sloshes around inside a whole tropical nut — that's coconut water, which is about 95% water and has virtually no fat or other nutrients. Coconut milk, by contrast, is coconut flesh and water blended thoroughly into a smooth, homogeneous mixture. Drinking coconut milk is said to strengthen the immune system, benefit the skin, slow aging, aid digestion, help bring down a fever, and ease asthma, osteoporosis, and kidney stones. Those benefits apply to the natural product, though — canned milk with artificial additives has fewer.
