Step 1:
Peel carrots, grate on a fine grater, fry in a mixture of vegetable and butter under a lid until soft, flip into a colander. Chop the greens. Separate the yolks from the whites and add to the carrots. Add salt and pepper, add chopped herbs and mix.
Step 2:
Beat the cooled whites with a pinch of salt to a strong foam.
Step 3:
Put the proteins in the carrot mass and mix gently.
Step 4:
Pour the carrot mass onto the parchment-lined mold, smooth it out with a spoon. It is desirable that the layer of carrot mass is not thinner than 0.5-0.7 cm, otherwise, when rolled into a roll, the finished biscuit will burst. Bake for 15 minutes in the oven at 180 degrees.
Step 5:
While the biscuit for the roll is baking, prepare the filling. In order to make it easier to grate processed cheeses, you need to put them in the freezer 30 minutes before cooking. Grate hard and processed cheeses on a coarse grater. Wash the green onions and chop them finely. Add onion, spices and mayonnaise to the cheese, mix everything thoroughly. Mayonnaise may need more or less, but it is desirable that the filling is not dry.
Step 6:
Take the finished biscuit out of the oven and leave it in the form for 5 minutes. Turn the biscuit onto the film and very carefully, slowly, remove the paper. Maybe a little biscuit will stick to the paper, but it's not scary. You can use a knife to remove the stuck remnants of the biscuit from the paper and put it on the future roll before laying out the filling.
Step 7:
Put the filling on a biscuit, carefully smearing every centimeter
Step 8:
Using the film, taking the edge, roll the sponge cake with the filling into a roll. Wrapping the roll with the same film.
Step 9:
Put the roll in the refrigerator for a while for impregnation. And it is better to leave it overnight.
Step 10:
