Step 1:
Ingredients for making gingerbread.
Step 2:
Let's start with cooking "burnt". Pour half of the sugar into a saucepan with a thick bottom (without water) and heat over low heat until dark brown and a bluish haze appears.
Step 3:
Boil half a cup of water and gently pour boiling water in parts (this is very important, do not pour cold water, otherwise hot caramel will spray and you may get burned!!!). Add the other half of the sugar and melt. Remove from the stove and cool for 10-15 minutes. During this time, the temperature of the caramel will drop to about 70 degrees.
Step 4:
Add softened butter, cinnamon and nutmeg to the pan with caramel. Stir until the oil is completely dissolved. Cool completely.
Step 5:
Add 1 whole egg and two yolks. We put the proteins in the refrigerator (we will need them later). Knead. Gradually introduce flour, adding a pinch of salt and soda. We begin to stir the dough first in a saucepan.
Step 6:
Dusting the table with flour, knead the dough to the consistency of elastic plasticine.
Step 7:
Wrap in plastic wrap and put in the refrigerator for 1.5 hours.
Step 8:
Preheat the oven to 180 degrees. Roll out the cold dough in thin layers. Cut out figures using shapes or cardboard templates.
Step 9:
Bake for 5-7 minutes.
Step 10:
Proceed to the preparation of icing sugar (icing). Add the sifted powdered sugar to the cooled proteins. Do not beat, but simply knead with a spoon.At the end, add 0.5 teaspoons of lemon juice. Let stand for half an hour. Then put it in a tight bag, make a small hole at the tip and start painting the cooled gingerbread.
