First you need to "pickle" the apples with raisins.
Peel the zest from the lemon. Next, you need to squeeze the juice out of the lemon, pass it through a sieve to remove the bones.
Put the zest removed earlier in the juice.
Put slices of peeled and cored apples in a bowl with lemon zest and juice. Mix it up.
Add pure raisins.
Mix again and leave for about an hour, stir from time to time so that the apples with raisins are soaked from all sides with lemon juice and aroma. The raisins will absorb the lemon juice.
Mash the cottage cheese with a fork to remove large lumps.
