Step-by-step cooking

Cooking time: 2 hours
  1. Step 1:

    Step 1.

    Ingredients

  2. Step 2:

    Step 2.

I kneaded the dough with a combine, but you can do everything manually. Sift the flour and pour it into the bowl of the combine. Add yeast and grind together with flour into crumbs. (If you are not sure about the quality of yeast, it is better to activate them first. To do this, dissolve the yeast in warm milk, add 1 tsp sugar and leave for 5-10 minutes. During this time, a foam cap should appear on the surface, if the yeast has foamed, then everything is fine with them.)

  3. Step 3:

    Step 3.

Finely chop the orange zest and grind it with sugar, so the zest will give more flavor.

  4. Step 4:

    Step 4.

Sugar turns out to be very fragrant, take the amount of zest to your taste, 1 tsp is always enough for me .

  5. Step 5:

    Step 5.

In a separate container, mix warm milk, yogurt, 1 egg, melted butter and sugar with zest. Mix everything together.

  6. Step 6:

    Step 6.

Turn on the combine and add liquid ingredients in small portions, knead the dough.

  7. Step 7:

    Step 7.

The dough turns out to be quite sticky, but not liquid. You may need to add some flour.

  8. Step 8:

    Step 8.

Sprinkle the work surface with flour, spread the dough, and knead until smooth.

  9. Step 9:

    Step 9.

The dough turns out to be very tender and soft (do not overdo it with flour). Roll the dough into a ball, put it in a bowl and leave it to rise in a warm place for 1 hour. The dough should increase by 2-3 times.

  10. Step 10:

    Step 10.

When the dough has come up, chop the hazelnuts (or any other nuts to your taste), level them on the work surface, spread the dough on top.

  11. Step 11:

    Step 11.

Mix the nuts into the dough.

  12. Step 12:

    Step 12.

To make our bread not only delicious, but also beautiful, we divide the dough into 3 equal parts.

  13. Step 13:

    Step 13.

We roll out each part into a bundle, we get 3 flagella. We weave a pigtail from them, carefully fastening the dough at the ends.

  14. Step 14:

    Step 14.

We put the finished pigtail into the mold and leave it to rise for 20-30 minutes. The bread that has come up is smeared with a shaken egg and, if desired, sprinkle sesame seeds on top.

  15. Step 15:

    Step 15.

Bake bread in a preheated 180 C oven for about 30-40 minutes. Let the finished bread cool down.

  16. Step 16:

    Step 16.

This is how the bread looks in the section, or rather in the fault. The bread turns out to be very tender, airy, and thanks to the zest and nuts very fragrant. Bon appetit!
