Cooking method
From flour, water, salt and yeast, knead a thick, elastic dough. Cover it and leave it for an hour. While the dough is suitable, prepare the filling.
Lamb is passed through a meat grinder. Finely chop the onion and capsicum. All the greens are washed, dried and crushed. The more greenery there is, the better. Add onion, capsicum, herbs, crushed garlic to the minced meat. Mix everything well. Add tomato paste, pepper and salt to taste. If tomatoes are used instead of tomato paste, then they will need to be peeled and rubbed through a grater. The filling should turn out to be runny. From the dough we form small balls the size of a tennis ball. We roll them out thinly with a thickness of about 3 mm. We transfer the tortillas to a baking sheet covered with parchment and spread the filling on top of a thin layer. Bake in a preheated oven for about 8 minutes at a temperature of 240 degrees. The aroma when baking teases all the neighbors. Ready-made lamajos are stacked in a pile, so that they cool down more slowly, we cover them with a towel or a saucepan. Fragrant lamajos are served hot. It turns out the food is similar to pizza.
