Moldova is a small sunny country. Its national food also smacks of sunshine and fun. Today I propose to cook sunny Moldovan cookies with marmalade, the culinary recipe of which was suggested to me by my friend. This cookie is called semilune.
Take a pack of butter and melt it. Next, add 1.5 cups of sugar to it and rub it thoroughly. Then we put 10 boiled egg yolks, lemon zest and a little juice in this mass. We continue to rub. Gradually we begin to pour flour. 2 glasses should be enough. The dough is ready if it turned out to be cool, but elastic. Then wrap it in a film and put it in the freezer for 20 minutes. After this time, we pull out the dough and roll out a layer of it, the thickness of which is half a centimeter. We take a glass with sharp edges and cut out circles, each of which we also cut in half. We put these halves on a baking sheet. Bake for about half an hour at 180 degrees.
While the cookies are baking, take the marmalade, and melt it in a water bath. To do this, you can use a microwave oven. Grease one half of the cookie and cover the other. In the remaining marmalade, add the powdered sugar with a spoonful of lemon juice and zest. With this marmalade, we coat the cookies on top.
