Crucian carp with cheese in the oven

Very nutritious and delicious dish with creamy taste! I've always wanted to try carp in sour cream with cheese. This is probably one of the oldest culinary recipes of classical Ukrainian cuisine. However, cheese was added to this food only in our days. In general, I recently found a great recipe and decided to make my dream come true. I bought three cute crucians – it's about 500-600 grams. They do not need to be cut – just washed, cleaned of scales and fins and gutted. On top of everything else, I also feed the heads to cats – there is nothing delicious in them. Another secret is to dry each fish with a napkin both inside and outside. Then, when frying, the crust turns out to be more crispy and tasty. And I love this kind of fish.

    While the crucians are frying, I cut onions into large rings, grate cheese and finely chop the greens. Sometimes I mix greens and sour cream almost immediately – it's even easier to season carp. Then I warm up the oven – you need to put the carp in it after frying.

    But first I put the fish in a deep baking tray, cover with onion rings, completely pour sour cream with greens

    And sprinkle grated cheese on top. By the way - the fatter the sour cream, the more tender the food will turn out. You need to bake the carp quickly – until the cheese completely melts and acquires a golden crust. It can be served almost immediately on the table.

    Crucian carp in sour cream with cheese are perfectly combined with dry white wine or port wine – I have not yet met a more refined fish recipe.
