Step 1:
Cut the eggplant into 5 mm thick plates. Salt and leave for 10 minutes. After washing and drying, then the bitterness from the eggplant will go away.
Step 2:
Lay out the eggplant plates on a baking sheet with foil. Sprinkling them with vegetable oil, we send them to the oven preheated to 220 degrees for 10 minutes. The main thing is not to overdo it, so that the plates do not soften much, otherwise it will be difficult to wrap them in rolls.
Step 3:
Cut the onion into cubes.To avoid crying when slicing, put the onion in the freezer for a couple of minutes, then your eyes will remain dry.
Step 4:
Finely chop the garlic. You can also skip through the garlic press.
Step 5:
Mix minced meat with onion, garlic, breadcrumbs and egg. We also add half of the spices and salt. Let the minced meat brew a little. Do not immediately add all the crackers, so that the minced meat does not turn out very dry.
Step 6:
We put the prepared minced meat on the eggplant plate and roll it into a roll.
Step 7:

Prepare the sauce. Add the remaining spices to the sour cream and mix everything together. If you want, you can also add paprika.
Step 9:
Pour the prepared rolls with the prepared sauce and send them to the preheated oven to 220 degrees for 30-35 minutes. See the readiness of the dish in your oven, you may need less or more time.

We give the finished rolls time to cool down and serve them cold on the table as a snack. You can also serve hot with a side dish (mashed potatoes, rice, vegetable salad) as a main course.
