Softened butter is rubbed with sugar and yolk.

Form a thin sausage from the cooled dough, cut it into equal pieces about 1.5 cm thick.

From the pieces we make cakes with a diameter of no more than 3 cm. In the middle of each tortilla we make a recess of a smaller diameter.

We put our future birds on a greased baking sheet. In the middle of each recess, sprinkle a little chopped nuts.

Bake " cheesecakes" in heated to 200 deg. bake for about 10 minutes until golden brown.
Step 9:
While the baking cools down, we make a protein cream. Whisk the protein with a mixer, adding sugar in small portions. For greater stability of the protein foam, you can add a few grains of citric acid. At the end of whipping, add vanilla. Whisk until a dense, stable mass.

In the middle of each "cheesecake" we spread the cream from the syringe.

Put in heated to 170 degrees. until light browning.
