Step 1:
Wash, peel and grate potatoes on a coarse grater.Wrap the resulting mass in paper towels and squeeze with force.Transfer to dry towels, wrap and put in a bowl.Cook in the microwave for 2-3 minutes at full power.Let stand for a minute.
Step 2:
In a dry frying pan, fry the bacon until it crunches. This can be done over low heat, melting the fat and browning at the same time, and it is necessary to put the bacon in the pan while it is still cold. Remove the bacon from the pan, cool slightly and cut into small cubes.It is better to take a frying pan with a removable handle so that you can continue cooking in the oven.
Step 3:
Put the prepared potatoes in a frying pan with melted fat, do not stir for about 3 minutes, let it grab on medium heat, then mix.Wash the sweet pepper, remove the stalk and the middle with the seeds.Cut into small cubes and add to the potatoes. Fry for 3 minutes without stirring, then stir again.
Step 4:
Add salt, pepper and chopped bacon.Fry, stirring occasionally for another six minutes.
Step 5:
Preheat the oven to 200 degrees.Transfer the mass to a wide baking dish, if required, or simply flatten with a spatula, lightly tamping.Then make holes with a spoon (according to the number of portions) and break the eggs in them, trying not to damage the yolk.Grate the cheese and sprinkle the potatoes around the eggs.
Step 6:
Bake for 8-10 minutes or until the protein hardens and the cheese melts.Sprinkle the finished dish with chopped herbs.
