Frozen cherry compote

Simple, delicious, bright, and fragrant—and quick to make! Putting together a compote from frozen cherries couldn't be easier. The main thing is to stock up on the berries ahead of time. You don't even need to thaw them before cooking!

    How do you make compote from frozen cherries? Gather the ingredients you'll need. You can freeze the cherries yourself in summer: wash them, pat them dry, and pit them. Then spread them out on a board and put them in the freezer. Once the berries are partly frozen, you can transfer them to bags. Or you can buy frozen cherries at the store—they're available year-round.

    To make the compote, pour the measured amount of water into a pot and set it on the stove. Bring the water to a boil. Add the sugar to the boiling water and stir until it's completely dissolved.

    Then add the frozen cherries to the pot. There's no need to thaw them first—they'll thaw on their own as they cook. Return the pot to the heat and bring everything back to a boil. Add the lemon juice. Cook the compote for 5 minutes. Then cover the pot and take it off the heat.

    Let the finished compote sit for a while so it can steep and cool down a bit. You can also let it cool completely. In winter we usually drink the compote warm, but in summer you can add ice cubes—it makes a wonderful cooling drink!

    The frozen cherry compote is ready! It has a rich flavor and a lovely aroma! Pour the compote into a pitcher along with the cherries and serve. Cookies or sweet rolls go nicely with a compote like this. Enjoy!
