You can use any rice, but I prefer parboiled long-grain—it doesn't get too soft and holds its shape when mixed with the other ingredients. Boil it ahead of time in salted water until done (check the package for the time). Drain the cooked rice in a colander and let it cool.

    Choose saury packed in its own juices if you can—it's lower in calories. But if that's not available, saury in oil works too. Take the fish out of the can, shake off the liquid, and mash it with a fork.
