Cabbage soup for weight loss
A light vegetable soup for light-eating days! Anyone who knows diets firsthand has surely heard of that "miracle" dish—cabbage soup. There are several ways to make it, but the classic recipe uses nothing but fresh vegetables. Let's go with that one.

Step 1:
Gather the ingredients from the list. In harvest season this diet dish is very budget-friendly, especially if all the vegetables come from your own garden. Trim the dry outer leaves off the cabbage and cut it into small pieces—there's no need to shred it too finely. The idea is that you'll chew larger pieces of cabbage longer, so you'll feel full sooner and eat fewer calories.

Wash and peel the carrot (if it's straight from the garden, just scrub it with a stiff brush). Cut it into rounds if it's small, or into cubes if it's large.

Peel the onion and cut it into cubes the same way. Instead of onion you can use leek, which has a milder flavor. Finely chop the celery; you can use other fresh herbs to taste.

Step 4:
Wash the bell pepper and tomatoes. Remove the seed core from the pepper and the stem end from the tomatoes, and cut the flesh into cubes.

Pour clean filtered water into a pot and set it on the stove. When the water boils, add the cabbage and carrot. Cook for about 7 minutes over medium heat.

Add the onion, bell pepper, tomatoes, and celery. Keep cooking for about 10 more minutes. Add spices to taste. Salt isn't recommended in this soup, since it makes the body retain water and works against weight loss—but if you really want, you can add a pinch to balance the flavor.

Some people add curry powder to this soup, as it's said to aid weight loss, but I'm not a fan of its flavor, so I added a pinch of ground black pepper instead. You can also add a clove of garlic put through a press for aroma. Cook the soup for about 10 minutes, turn off the heat, and let it rest, covered, for 15 minutes. Serve the diet soup.
