Bulgur with Vegetables in a Multicooker

Step 1:
How do you make bulgur with vegetables in a multicooker? Gather everything the recipe calls for. Which vegetables are best? Use fresh ones from the fridge or garden, or reach for frozen — this time I used a mix of fresh and frozen.

Peel the onion, carrot, and garlic. Halve the bell pepper and remove the core and seeds. Rinse all the vegetables in cold water and pat them dry to get rid of excess moisture. Cut the onion, carrot, and pepper into evenly sized dice.

Pour refined vegetable oil into the multicooker bowl and set it to the "Fry" mode. Once the oil is hot, add the onion, carrot, and pepper. Cook, stirring, for about 10 minutes.

Meanwhile, rinse the bulgur a few times until the water runs clear.

Add the tomato to the bowl, cut into small pieces (or small cherry tomatoes left whole). Peel the tomatoes first if you like. Add the frozen vegetable mix too, and stir-fry for about five more minutes.

Add the bulgur to everything in the bowl, along with the finely chopped garlic.

Pour in the water. How much? The usual rule is two parts liquid to one part grain — so for one cup of bulgur, add two cups of water. Season with salt and pepper to taste and stir.

Close the lid, set the multicooker to "Rice/Grain" or "Pilaf," and let it cook through. The time sets automatically depending on your model.

The bulgur with vegetables is ready! It's delicious hot or cold. To serve, sprinkle each plate with chopped fresh herbs.
