Lenten potato zrazy with mushrooms
Juicy, fragrant, and golden! Made entirely from plant-based ingredients. Lenten potato zrazy with mushrooms are so easy to make that even a beginner can manage. From the most affordable, budget-friendly ingredients you get a very tasty dish that's good not only for a fast but for a vegetarian menu too.

Step 1:
How do you make Lenten potato zrazy with mushrooms? Gather the ingredients. Use a neutral, odorless vegetable oil.

Wash and peel the potatoes ahead of time and boil them in salted water until tender.

Drain the water. Mash the boiled potatoes with a masher until smooth, with no lumps. Let the mashed potatoes cool.

Button mushrooms work well for the filling. If you use wild mushrooms, boil them first in salted water. Wash the button mushrooms and pat them dry. Cut them into small cubes.

Step 5:
Peel the onion and cut it into small cubes too.

Step 6:
Fry the onion in a skillet for 5 minutes, stirring occasionally. Add the prepared mushrooms to the skillet with the onion. Fry the mushrooms, stirring, until done. Salt them about halfway through cooking.

Step 7:
Add the flour and 2 tablespoons of vegetable oil to the cooled mashed potatoes. Mix well. Let the potato mixture sit for 10 minutes. During that time the flour swells and the mixture becomes more cohesive.

Step 8:
I found it handy to shape the zrazy using plastic wrap. Lay out a portion of the potato dough as a flat patty and smooth it out.

Step 9:
Put about 1–1.5 tablespoons of mushroom filling in the center of the patty.

Step 10:
Using the plastic wrap, lift and bring the edges of the patty together, sealing it like a pie.

Step 11:
Shape all the zrazy this way.

Step 12:
Pour the breadcrumbs onto a small rimmed plate. Roll each zraza in the breadcrumbs on all sides.

Heat the vegetable oil in a skillet. Add the prepared zrazy. Fry them over medium heat until golden brown.

Then flip the zrazy and fry the other side until done.

Step 15:
Serve the Lenten potato zrazy with mushrooms hot. Enjoy your meal!
- Instead of fresh mushrooms, you can use frozen or dried ones (you'll need 5–6 times less dried than fresh). Frozen mushrooms can be thawed however is convenient (in the microwave on the appropriate setting, for example—check your appliance's manual) and the liquid drained off. Or, if the amount of liquid in the recipe isn't critical, use them without thawing. Dried mushrooms should be washed well, since they aren't washed before drying, and then soaked in cold water for at least 2–3 hours.
