Delicate, airy, light, incredibly delicious cheesecake! Japanese cheesecake is different from the usual treats. Its structure is weightless, light, like a cloud. You can cook it yourself in a slow cooker, which I recommend doing today.

Put the softened butter in a bowl, add cottage cheese and sour cream, mix with a whisk.

Break the eggs, separating the yolks from the whites. We introduce the yolks into the curd mass, mix.

Here we sift flour with starch, stir with a whisk. We introduce milk in a thin trickle, stirring constantly. Pour in the vanilla extract, mix again (the dough at the output turns out to be liquid, like pancakes). Rub the resulting dough through a fine sieve to prevent a single lump of cottage cheese.

Whisk the proteins with a mixer until stable peaks with the addition of sugar.

At this stage, mix the proteins with the dough, very carefully. Stir until the mass becomes smooth and homogeneous.

Lubricate the bowl of the multivark with butter, spread the dough.

No less responsible is the moment of baking. Bake on the "Steam" mode for 10 minutes, then change the mode to "Preheating" for 50 minutes, then repeat the cycle again: "Steam" for 10 minutes, Preheating - 50. In total, the cheesecake will be in the slow cooker for 2 hours. All this time we do not open the lid.

We also cool it in a couple of stages: first with the lid open for 15 minutes, then remove the bowl and leave it to cool completely. And only after that, with the help of a steam grate, we extract the cheesecake from the bowl.

Ideally, a cheesecake needs to stand in the refrigerator for a couple of hours to reach the full peak of taste qualities.

Having courageously waited the allotted time, we decorate the culinary creation with fresh berries, cut it and serve it to a cup of tea! Have a nice tea party!
