Yeast-free bread with seeds on kefir in a bread maker

Very tasty and nutritious bread. Easy and fast cooking! This bread does not contain harmful and heavy ingredients. 100 percent of them belong to products with a low glycemic index. Bread has a high content of proteins and dietary fiber + moderate fat content.

Cooking method

Cooking time: 1 h 35 min

1) measure 400 ml of kefir in a measuring cup.;

2) pour soda into kefir and pour everything into a cooking mold;

3) pour the table salt;

4) pour into the mold a tablespoon of water with 2 tablets of stevia extract dissolved in it;

5) pour 3 tablespoons of grape seed oil into the mold;

6) fill in the first half of whole wheat flour (300 gr.);

7) fill in a tablespoon of pumpkin seeds;

8) we put a tablespoon of sunflower seeds to sleep;

9) we put a tablespoon of flax seeds to sleep;

10) fill the second half of whole wheat flour (300 gr.);

11) put the mold in the bread maker;

12) Choosing a program for fast bread preparation;

13) We choose the weight of the product on the bread maker 1000 gr.;

14) We choose a light crust on the bread maker;

15) Start the cooking program.

16) as the dough is mixed, we observe its consistency. If necessary, you can add a little water (a tablespoon each);

17) 30 minutes after the start of the fast bread preparation program, you can pull the dough mixing blades out of the mold. Otherwise, large voids will remain in place of the blades and it will not be very convenient to pull them out of baked bread (at least after cooking in our bread maker)

18) after the end of the program, we put the bread on the grill and let it cool down.

All ingredients are poured and poured into the bread maker in the order listed above. According to the instructions for the bread maker, in my case, liquids are first poured and then 50% of flour is poured, then solid ingredients and the remaining 50% of flour.

Taking into account the fact that bread is made on kefir with soda, prolonged mixing of the dough and prolonged holding of the dough for lifting is not required.

Therefore, for kneading and baking bread, we use a program for fast bread preparation.

With the specified parameters, the dough is mixed and aged (rests) for 35 minutes. After that, it is baked for 1 hour.

The total duration of the fast bread cooking cycle with the above parameters is 1 hour 35 minutes.

For baking bread, we use the Moulinex baguette and co bread maker (model SERIE B05-A).
