Cooking method
We begin the preparation of this Tatar sweetness by sifting flour into a large bowl. Next, pour baking powder to it and mix everything thoroughly together with a whisk. Add granulated sugar to the flour mixture, pour salt, mix again with a whisk.
Now add eggs to the dry ingredients, pour in the milk and start kneading the dough. We knead it thoroughly, it should be steep, about the same as for dumplings or dumplings. If the dough is not particularly steep, add more flour (a little bit). We form a ball from the finished dough, place it on the bottom of a deep bowl, which we cover with a clean towel on top. Leave the dough alone for half an hour.
When the specified time has passed, we remove the dough from the bowl and spread it on the work surface, sprinkled with a small amount of flour. Roll out the dough thinly. For the convenience of rolling out, you can divide the dough into several parts. Now we cut the dough layer into thin strips 2-3 cm wide, which we cut across into strips 0.3-0.5 cm
wide.
Wash almonds, then soak in clean warm water for 10-15 minutes. After that, drain the water, and put the almonds on a paper towel to dry, blot the nuts on top with them.
Pour vegetable oil into a saucepan or deep frying pan with a thick bottom and put it to warm up over high heat. When the oil is hot, the heating is reduced to moderate. Next, we spread the prepared dough strips in oil in portions, fry for 1-1.5 minutes (until they become a beautiful golden color). The fried blanks are removed from the oil and spread on paper towels to absorb excess fat.
We prepare the syrup, for which we mix granulated sugar and water in a small saucepan. We send the saucepan to a low heat, constantly stirring until all the sugar crystals dissolve. This happened - we put honey in a saucepan, cook everything together for 5-7 minutes. Do not forget that you need to stir the syrup constantly! Otherwise, it may burn.
We transfer the fried dough pieces to a large glass or enameled container, add almonds there and pour everything with hot syrup from a saucepan. We mix everything thoroughly with a wooden spoon or spatula. Next, it remains to put the chuck-chuck on a wide plate and form a slide.
The formed chuck-chuck is put in the refrigerator for 2-3 hours, or even longer, after which it can be served to the table.
Have a nice tea party!
