Vegetable Spread for Winter (Ikra)
A savory spread of zucchini, carrots, and bell peppers — simple and delicious! This tender vegetable ikra will remind you of summer's best produce all winter long. It's perfect spread on bread or served alongside soups and main dishes.

Step 1:
Gather all your ingredients.

Wash the tomatoes thoroughly and cut them into small pieces. Put them in a blender and purée.

Pour the tomato purée into a pot.

Wash the zucchini thoroughly. Trim the ends and cut away any bad spots. Cut into small pieces, put in the blender, and purée as well.

Pour the zucchini purée into the pot with the tomato and stir.

Step 6:
Now take the carrots, onion, and bell peppers. Peel the carrots, remove the cores from the peppers, and peel the onion. Cut everything into small pieces and put it in the blender.

Add this purée to the pot with the tomato and zucchini too.

Now turn on the heat and, once it comes to a boil, cook the vegetable purée for about half an hour, stirring now and then. Be careful — mine sputtered, so keep the lid handy as a shield when you stir.

Meanwhile, peel the garlic and grate it on a fine grater or run it through a garlic press.

After the half hour, add the garlic, salt, vinegar, and vegetable oil to the spread and cook for about 5 more minutes.

Now you can ladle the spread into sterilized jars and seal them with sterilized lids. Turn the jars upside down and leave them until completely cool. Store the vegetable spread in a cool, dark place.
- This amount makes about five 1-pint (half-liter) jars. If you like a little heat, add some hot pepper. You could also call this a zucchini spread, since zucchini is the main ingredient. You can add eggplant too, for a slightly different flavor. The texture is up to you: I blended everything until smooth, so it came out completely puréed and silky with no lumps — great for spreading on bread. You could also run it through a meat grinder and skip the blender for a slightly chunkier texture, or dice all the ingredients so it turns out more like a salad. That's delicious and interesting too.
