Cooking method
The red-eye is salted extremely simply. First you need to prepare the fish. If required, defrost: the defrosting process should be natural, since when defrosting in water or microwave, the taste qualities of fish deteriorate. Then peel, gut, cut into large portions.
So, let's go directly to salting red eyes:
1. Bay leaf, peppers, cloves and allspice are ground in a mortar.
2. Pour the spices into a small cup, add sugar and salt, mix.
3. We put the fish with their backs down in a suitable container.
4. Pour the mixture of salt, sugar and spices with cold water, stir well.
5. Now you need to pour this brine over the fish, put a small load on top so that the fish is not pressed too hard - only slightly.
6. We put the fish to salt in the refrigerator for three days.
Ready-made fish will be a great snack for beer. Serve it in large quantities!
