Cooking method
To begin with, birch sap needs to be cleaned of various midges that could get in during the juice collection. To do this, we line the strainer with gauze in 2-3 layers and filter the juice.
Put the raisins in a deep bowl and pour cold water. We stand for half an hour so that the raisins swell.
Birch juice is poured into a clean and dry container, add sugar and swollen raisins. We give the sugar to completely dissolve and, covering the container with a lid, leave it for a couple of days to ferment.
We filter the finished kvass once again, as we did with birch juice.
