Step 1:
Prepare the products. The fish must first be thawed. It is better to do this gradually, in the refrigerator, so that it does not fall apart when slicing. The thawed carcass should be cleaned and gutted, carefully removing all the insides and the black film. Take filtered or bottled water.
Step 2:
Pour water into a saucepan, add salt, sugar, bay leaf and pepper. Put on fire and bring to a boil. Boil for a couple of minutes and remove from the heat. Leave until completely cooled.
Step 3:
While our brine cools down, let's get busy with fish. I cut it along the spine and removed the skeleton, then cut it into small pieces. Then you need to put it in a jar.
Step 4:
When the brine finally cools down, add vinegar to it. The marinade turned out.
Step 5:
Fill the mackerel with marinade, close the jar with a lid and leave for 24 hours for salting and pickling. Serve to the table, garnished with onions and herbs.

You can put allspice, cloves, coriander, paprika, mustard seeds in the brine. Replace the usual vinegar with apple vinegar.
You can also pickle onions together with fish, just put the root vegetable cut into rings in a jar with it and pour the marinade.
In the same way, any vegetables are marinated with mackerel - carrots, cucumbers, green peas. It will be not only delicious, but also very beautiful.
You can add vegetable oil or wine to the marinade - this will enhance the taste of pickled fish.
Instead of sugar, put a spoonful of honey, only in the almost cooled marinade, so as not to ruin its useful properties - you will get a very interesting taste.
You can marinate fish with whole carcasses - cut off only the heads and remove the insides.
Serve pickled fish tastiest with boiled potatoes.
