Step 1:
To prepare a vegetable assortment for the winter according to the proposed recipe, take cucumbers, tomatoes, zucchini, garlic, a mixture of peppers and fresh dill, you can use umbrellas. For the marinade filling, citric acid, salt, sugar and water will be required.
Step 2:
Zucchini can be taken both young and ripe, in any case it is convenient to cut them into long cubes - this way they fit more compactly into cans, especially if you like to use, like me, not large three-liter cylinders. However, it depends on the number of family members who are able to eat the billet in one or two meals, because it is no longer worth storing marinades and pickles.
Step 3:
So, sterilize the jars and lids in advance so that they are ready by the time the vegetables are laid. At the bottom of the prepared jars, put garlic cloves, a pinch of pepper with peas and gradually fill with vegetables, cut off the tips of cucumbers, pierce tomatoes with a toothpick from the side of the stalk.
Step 4:
In the gaps between tomatoes and cucumbers, squeeze the zucchini cubes and dill sprigs as tightly as possible.
Step 5:
Be sure to put dill on top - it prevents vegetables from popping up.
Step 6:
Fill the filled jars with boiling water for 5 minutes, cover with sterile lids. Drain the water into a saucepan.
Step 7:
Add salt, sugar and citric acid to the water, boil for 5 minutes, during which time all the powders will dissolve.
Step 8:
Pour the assorted prepared marinade and wrap tightly with screw lids. Turn the cans upside down and send them "under the fur coat" until completely cooled.
Step 9:
Ready-made jars with assorted zucchini, tomatoes and cucumbers for the winter, put in a cool place for storage, can be stored in normal room conditions.
Assorted zucchini, tomatoes and cucumbers can be supplemented with garlic, onion, white cabbage, red or cauliflower, any spices and herbs that you like best. Vegetables turn out sweet and sour, strong, crispy.
