Green tomatoes are the last vegetables that we collect from the garden when we remove tomato bushes. It's always a pity to throw away these green fruits that will never ripen.Probably because of this pity, people have come up with several recipes for eating green tomatoes.
Tomatoes are very well washed with a brush and cut into slices. We put it in a deep dish made of glass or ceramics, and very well sprinkle with salt. It is very important that the salt is not iodized. We leave it overnight in a cool place, This process expels excess water from tomatoes. Then we wash them in cold water. We begin to make a salad. Finely chop all the herbs and garlic. Mix herbs with green tomatoes, pour olive oil and vinegar. Sprinkle with salt and pepper to taste. The sauce should definitely be tried.
We put tomatoes in sterilized jars, leaving an empty space one and a half centimeters high on top. We put the jars on a water bath, covering them from above with lids. Bring the water to a boil and boil in this way for 20 minutes. Then we roll up the lids. You can also use cans with metal lids from store canned vegetables. We put the closed jars upside down and wrap them in a blanket for slow cooling.
