Beef liver chops

Very tasty, soft, tender, juicy, for the second for the family! Beef liver chops are unusually soft due to pre-soaking in milk. You can soak the liver overnight to cook it very quickly afterwards. This is a perfect, delicious family dinner, very healthy besides!

Step-by-step cooking

Cooking time: 4 h 30 min
  1. Step 1:

    Step 1.

How to make beef liver chops? Prepare all the necessary ingredients. You can, if you wish, take, for example, pork liver, but I prefer beef liver. Take milk of any fat content. It is best not to defrost the liver until the very end, in which case it will be better cut into portions.

  2. Step 2:

    Step 2.

Remove the thin film on the surface of the liver. It is she who squeezes a piece of liver when cooking. If the film is poorly removed, pour hot water over the liver, not boiling water, and then everything will work out without difficulty. Also remove all veins and ducts. Wash the liver and dry it with paper towels.

  3. Step 3:

    Step 3.

Cut the liver, if possible, into identical pieces about one centimeter thick. If you have not defrosted the liver completely, it will be cut with a knife without difficulty.

  4. Step 4:

    Step 4.

Put the pieces of liver in a deep bowl and pour the milk completely. The liver will be soaked and become more tender and delicious. Put the bowl in the refrigerator and leave everything for 3-4 hours.

  5. Step 5:

    Step 5.

Pour flour into a separate clean bowl, add salt and black pepper, mix. Salt the flour, not the liver. Why is it necessary to salt flour? Because as soon as you salt the liver directly, it will become stiff.

  6. Step 6:

    Step 6.

Take the liver out of the milk, shake off its remnants, and beat off the liver itself a little. Do it slowly, covering the meat with cling film - the liver is a very delicate product, it is easy to destroy.

  7. Step 7:

    Step 7.

Carefully transfer the liver into a bowl with flour mixture and roll it well on all sides.

  8. Step 8:

    Step 8.

Pour vegetable oil into a frying pan with a thick bottom and heat over medium heat. Put the liver chops in the heated oil and fry on one side for about 5-6 minutes.

  9. Step 9:

    Step 9.

Flip the liver to the other side and cook for another 4-5 minutes.

  10. Step 10:

    Step 10.

Pour water into the pan and close the lid. Cook for another 2-3 minutes and serve immediately. It is best to pour hot water into the pan so that there is no temperature drop, which does not affect the taste and softness of the liver very well.

  11. Step 11:

    Step 11.

Serve beef liver chops with your favorite side dish or with vegetables and herbs. Bon appetit!

Keep in mind that the quality and taste of the finished dish largely depends on the proper defrosting of the ingredients. How to avoid mistakes and choose the best way, read the article about defrosting.

Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it.
