Ice cream is a win-win option for treating guests. And if the delicacy is still cooked with your own hands - there will be no limit to the delight and excitement! Not to mention that homemade ice cream is much healthier than purchased. It can be safely given to children.
1. Pour almonds into a mortar, immediately add bitter almonds to it. Grind with a pestle, pour water in the process. You will need no more than 50 milliliters of water. It is needed in order to slightly dilute the oily structure of crushed almonds.
2. Pour the milk into a saucepan or into another heat-resistant container. We also spread the prepared almond mixture here. Mix it up.
3. Put the egg yolks in a separate bowl, pour sugar here. Rub the mass with a fork until smooth. You can also use a hand whisk.
4. We put the container with milk on medium heat and, stirring continuously, we introduce the yolk mass with sugar. Cook until thickened, while not stopping stirring.
5. The resulting creamy mass is filtered through a sieve directly into the ice cream maker. Cover with a lid. It is necessary to filter in order to avoid possible lumps.
6. We send the mass to the freezer for 40 minutes. Meanwhile, whisk the cooled fatty cream into a thick fluffy mass. We introduce it in parts into the frozen mass. We send it to the cold for about two more hours so that the mass freezes.
7. We serve the ice cream in cream cups, decorate with chopped almonds or other nuts. Additionally, you can decorate with fresh mint leaves or citrus peel. This is optional.
