Couscous salad with cucumbers and feta

Grate the zest of half a lemon on a fine grater, squeeze the juice out of the lemon. Mix the juice and zest, add a pinch of salt and pepper, pour in the olive oil and whisk well to make an emulsion.
Pour the couscous into a bowl and pour 1 cup of boiling water, add salt. Cover the bowl with a plate and leave for 10 minutes. Loosen the couscous with a fork and cool.
If the raisins are dry, fill it with hot water and leave for 10 minutes. Rinse and dry.
Cut the cucumbers into thin ribbons with a paring knife. Peel the onion and cut into thin half rings. Chop the mint leaves.
In a large bowl, mix couscous, onion, raisins, mint and cucumbers, pour the dressing over the salad. Chop the feta with a fork and sprinkle the salad.
