Amazing cheesecake, which is very light and easy to prepare. This cheesecake has a classic taste and consistency, as served in St. Petersburg coffee shops, which is why it is valuable to me personally! Enjoy your meal! Cheesecakes in coyotes always seemed to me to be something unimaginably difficult to prepare, but a successful recipe I got dispelled this opinion of mine. It turned out that cheesecake can be made simply and exactly the way I like it, and at home!

1. Beat the whites with a mixer into a fluffy foam. Without stopping whipping, pour 100 g of sugar in a thin stream. When all the sugar is poured in, stop whipping. Add the yolks to the mass and mix gently. Not in a circular motion, but from top to bottom! Then add the sifted flour and continuing to stir everything as well, wait until the dough absorbs all the flour. You should get a homogeneous mass without lumps.
2. Grease the baking dish with butter and lightly "powder" with flour. Pour the dough on the bottom of the mold. Spread half of the grated apple and blueberries evenly on top.
3. For the top layer of the pie, we make the following filling: cottage cheese, 1 egg sour cream and the remaining sugar beat with a mixer to a state of dense sour cream and pour the resulting mass into the pie.
4. Bake in a preheated 180 degree oven for 40 minutes. Bon appetit!
