In order to get an unusual caramel (unless you want to get the good old cockerels), we need to add a new flavor. To do this, you can add zest, vanilla pod or ginger to the caramel (then get it when the candy mixture is ready), cloves or fennel, barberry berries or a mixture for mulled wine....Whatever your heart desires. And you can also add fillers - chopped nuts, roasted sunflower seeds, pumpkin seeds or almond petals. Again, the scope for imagination is limitless.
So, our caramel is on fire. We give it a good boil and pour the circles on a silicone mat or foil. Be very careful - caramel has a temperature above 160 degrees. Quickly pour and insert the sticks. We do this, as if screwing them into caramel. It's good if you have an assistant, because caramel hardens very quickly. We leave our lollipops to dry for 5-7 minutes and carefully remove. That's it, our candies are ready)
