- Candy is a favorite treat for grown-ups and kids alike. It's no secret that store-bought sweets aren't entirely healthy, so caring home cooks find an alternative and make treats themselves. This recipe reveals the secret to making homemade lollipops. You'll need small sticks or wooden skewers, plus a candy thermometer, which you really can't do without. Many cooks don't know you can make candy like this even without molds. How? It's quite simple! 1. Pour the water and agave syrup into a heavy-bottomed pot. You can swap the agave syrup for glucose syrup if you like. Add the sugar to the same pot. 2. Set the pot over low heat and let the sugar melt. 3. Add your chosen flavoring to the mixture — in this case, vanilla extract. 4. When the mixture comes to a boil, add the crushed lavender flowers (this is optional, not required). 5. Once it's boiling, cook the mixture without stirring until it reaches 285–293°F (140–145°C). That takes about 6–7 minutes. 6. Place a silicone mat on your work surface. Pour the caramel mixture in small portions, forming circles about 2 inches (5 cm) across. If you don't have a silicone mat, you can use a parchment-lined baking sheet. 7. Set a stick (or a skewer) into each circle. Leave them to cool completely, about 20–30 minutes. As they cool, the candies will harden. 8. Gently peel them off the mat. To keep the candies from sticking together, you can wrap each one in plastic wrap. Enjoy, and to your health!
