This recipe reveals the secret of making homemade lollipops. For cooking, you will need small sticks or wooden skewers, and you can not do without a cooking thermometer. Many housewives do not know that you can cook such sweets even without having molds. How? It's very simple!
1. Pour water and agave syrup into a saucepan with a thick bottom. Agave syrup can be replaced with glucose syrup if desired. Here we pour sugar.
2. We send the pan to a small fire, let the sugar melt.
3. Add the selected flavor to the resulting mass, in this case it is vanilla extract.
4. When the mass boils, add the crushed lavender color (this is not a mandatory ingredient, optional).
5. From the moment of boiling, cook the mixture without stirring until it reaches 140-145 degrees. It takes about 6-7 minutes.
6. We place the silicone mat on the work surface. Pour the caramel mass in small portions, forming circles about 5 centimeters in diameter. If there is no silicone mat, you can use a baking sheet lined with parchment.
7. In each circle we place a stick (you can use a skewer). Leave to cool completely, for about 20-30 minutes. During the cooling time, the lollipops will harden.
8. Carefully remove them from the mat. So that the candies do not stick together, each lollipop can be wrapped with food wrap.
