- Wash the potatoes and boil them in their skins. Peel them and cut them into small cubes. Grate the carrot on a coarse grater. Peel the onions and also cut them into small cubes. Simply slice the peeled garlic into rounds. Chop the herbs together, into small pieces as well. Heat the vegetable oil in a sauté pan or just a small pot. Add the tomato paste and warm it for 7 minutes. After 7 minutes, add the chopped onion and 2 cloves of garlic to the pot. Sauté, waiting for the onion and garlic to start turning golden. As soon as they do, sprinkle all the remaining ingredients into the pot. Stir the mixture vigorously, frying it for the next 5 minutes. Pour 3 liters of boiling water and the rice into the pot. Start cooking. Judge doneness by the rice — once it's soft, add the potatoes and wait for the soup to come back to a boil. Take the soup off the heat. Finish the lean kharcho soup with the remaining garlic clove and chopped fresh herbs.
