Wash the fish, cut off the head and fins, clean. We remove the spine and all the bones. Fillet salt, pepper and sprinkle with spices (I have Provencal herbs). Pour lemon juice and put it in the refrigerator to marinate.
Next, we prepare the filling. Fry onions and carrots in a small amount of oil. Mushrooms (I had frozen!!! I will never buy it again) also fry in oil until golden brown. We rub the cheese (I have sausage, my husband asked me to do it with it).

We form a roll: we lay out the roast on the fillet in an even layer, then mushrooms, cheese, I added a little more fresh dill. We twist it tightly with a roll and wrap it in foil. We send it to the oven for 30 minutes at a temperature of 200 degrees. Cool the roll and eat. I think the side dish will be superfluous here. Well, it's just as your taste.
