Peel the quince, cut into pieces. The skin can be left.
Cut the meat into pieces as well. Fry it in vegetable oil for two or three minutes.
Add onion in half rings, fry everything.
Add quince, mix everything. Reduce the heat, add half a cup of boiling water, cover with a lid. Simmer for 40-45 minutes, stirring occasionally.
Add salt and pepper.
