Moldovan Mititei (Minced-Meat Sausages with Garlic and Spices)

Juicy Moldovan sausages, on the grill or in a skillet! Tasty. Easy. Mititei are little Moldovan sausages. They're usually grilled, but I made mine without a grill.

  • Run the meat through the grinder twice. Add a pinch of baking soda to the ground meat, along with pepper, salt, garlic (8–10 cloves), and 1.5–2 tablespoons of starch. Mix, then pour in the milk — I used the whole glass. Beat the mixture well, cover with plastic wrap, and refrigerate for two hours. Take it out and form the mititei: you can use a sausage attachment on the meat grinder, or simply shape them by hand. Brown the little sausages in vegetable oil on all sides until crusty, then transfer to a heavy-bottomed pot. Top with onion sliced into rings, the bay leaves, and whole peppercorns. Cover everything with boiling water and salt it. Put on the lid and bring to a boil, then simmer over low heat until done, about half an hour.
