1. Peel the onion, cut into half rings. Wash the eggplant and cut into medium cubes. My eggplant was young, so I didn't take off the bitterness. Finely chop the greens. Open the jar with beans and do not drain the liquid.
2. On a small amount of juice from the beans, add the onion. Add the eggplant to it and fry until the eggplant is brown and soft (about 10-12 minutes). If you do not follow the calorie content of the dish, then you can fry everything in vegetable oil. Although it turns out no less delicious without butter.
3. Add the beans with the remaining juice to the onion and eggplant, season with salt and pepper and add spices (I have suneli hops, which are perfectly combined with these ingredients). Simmer everything for about 10 more minutes. The main thing is that the eggplants reach, become soft, because the rest of the products are prepared very quickly.
4. At the end, add the herbs and garlic, squeezed out by a press or finely chopped. Mix everything and keep on fire for about 2 minutes. Serve lobio in a warm form, sprinkled with fresh herbs. The dish can go as an independent and as a side dish. Enjoy your meal!
