    Prepare all the necessary ingredients to prepare a pomade for cakes from proteins. Powdered sugar is better to make yourself by grinding granulated sugar in a coffee grinder. Ready-made should not be used, since it may contain impurities that will interfere with whipping proteins. Egg C0, preferably fresher. Make lemon juice yourself by squeezing it out of a lemon.

    Take a deep bowl with a rounded bottom, in which it will be convenient to walk a whisk. Dishes for whipping and what you will whisk the brush with must be clean and dry. Otherwise, the proteins may not whisk into a thick foam. Sift the powdered sugar through a sieve. This way you will exclude non-ground sugar particles that may not dissolve during the whipping process. Add a pinch of salt. Adding salt increases the volume of whipped protein.

    Wash the egg with soap and dry. Separate the white from the yolk. Above the plate with a knife, beat the shell in the center of the egg and split it into 2 halves. Pour from one half of the shell into the other until all the protein flows into it. The yolk will remain in the shell. Put it away, you won't need it. It can be used in other dishes. It is necessary to separate the protein from the yolk very carefully. If even a small part of the yolk gets into the protein, the pomade will not work.

    Add lemon juice. Mix everything until smooth.

    Use a blender whisk or mixer for whipping. Immerse the nozzles in the mass so that when it is turned on, it does not spray on the sides. Beat the brush at low speeds until a white foam appears. The whipping time depends on the capabilities of the technique you use. It took me 2 minutes on a 1500W blender.

    Turn on the high RPM and whisk until the mass becomes snow-white and glossy. If you use a hand mixer or blender, during the whipping process, move the nozzles around the entire volume of the bowl so that the mass is whipped evenly. It will become thicker and, as it were, increase in volume. When lifting the whisk, the pomade should slowly drain, forming a sharp wedge. I spent 10 minutes on it.

The finished brush should be used to decorate the cooled cakes. It can be used to make inscriptions and drawings, as well as to lubricate the top of the cake by simply dipping it into a container with a brush. It does not dry out within 2-3 hours after cooking. But this time may depend on the freshness of the egg, storage conditions and the quality of the sugar from which the powdered sugar is made. So it's better not to delay.
Cakes decorated with a pomade of proteins look very neat and appetizing. And the taste of such a pomade is very pleasant.
I draw your attention to the fact that if you want to make the brush thicker, you can increase the amount of powdered sugar. But you should not reduce it, since the brush will be too liquid and it will be inconvenient to work with it.
