- Carefully pick over the raspberries and put them in a suitably sized container — an enameled pot is best. 2. Cover the berries with two-thirds of the sugar and let them stand for two hours. During this time the berries will release their juice. 3. Set the pot over low heat and bring it to a boil, stirring so all the sugar dissolves. Skim the foam off the surface. Once it boils, cook the jam for 5 minutes, then take it off the heat and let it cool completely. 4. Add the remaining sugar to the cooled berry mixture. Bring it back to a boil and cook for 5 minutes. 5. Cool the pot of jam quickly by setting it in a container of very cold water — you can even add ice. Once the jam has cooled, spoon it into sterilized jars and seal with lids. The raspberry jam for winter is ready. Enjoy it with your tea!
