  • Doctors of old strongly urged mothers to feed their children fresh cabbage so they would grow up strong and healthy. Little has changed about cabbage since then. It's good both on its own and combined with other foods, especially with vegetables in salads. Cabbage is very good for children and adults alike. Cabbage salad is quite simple to make and the ingredients are very affordable. As soon as fresh vegetables and herbs come into season in spring, I always try to make plenty of vegetable salads. Before making the salad, prep all the ingredients — wash the cucumbers and herbs, and boil, cool, and peel the eggs. Shred the cabbage thinly and scrunch it a little with your hands. The thinner you slice it, the tastier the salad! It will release a bit of juice and soften. But if the head is young, fresh, and juicy, this may not be necessary — judge by your own cabbage. Cut the cucumbers into matchsticks and add them to the cabbage. Add the finely chopped green onion and the chopped boiled eggs. Add a little mayonnaise to taste. Mix everything well. Don't serve the salad in the same bowl you made it in; it's best to transfer the finished salad to a serving bowl and chill it a little in the fridge. This salad is sure to please you and your guests with its fresh, light flavor. Adding a little minced garlic gives it a whole new taste and aroma. Serve it for a family dinner or on a holiday table.
