Fried Potato Patties

Patties with no flour? Yes, it's possible — and very tasty! These pan-fried potato patties make a great dinner, served with a vegetable salad and sour cream. You can choose a meat, mushroom, or cheese filling — any of them will be delicious! To keep the mashed potatoes from falling apart as you shape them, add an egg or a little flour; the egg is the better choice, since it makes the dough more tender.

    1. Peel the potatoes, wash them, cut them in half, and boil them in lightly salted water until done.
    1. While the potatoes cook, make the filling:
    • peel the onion and cut it into small cubes;
    • cut the mushrooms into large pieces and fry them in vegetable oil until the moisture cooks off, then add the prepared onion and keep frying for another 4–5 minutes;
    • salt and pepper the filling to taste;
    • chop the green onion with a knife, add it to the mushrooms, and stir.
    1. Drain the boiled potatoes and mash them. Crack the egg into the mash, salt it lightly to taste, and mix thoroughly.
    1. In a deep bowl, beat the egg with the water until smooth. Put the breadcrumbs in a separate dish.
    1. Once the mash has cooled a little, scoop up a small portion with wet hands, flatten it into a patty, add the filling, and carefully seal the patty closed.
    1. Shape all the patties this way, then dip them in the egg wash, coat them in breadcrumbs, and fry them in vegetable oil on both sides until nicely golden.
    1. Set the finished patties on a paper towel to drain the excess oil, then serve.
