1. In a small saucepan over moderate heat, heat the cream with the seeds and vanilla pod. Set aside and keep them warm until used.
 2. In another saucepan, mix sugar, water, butter, salt and honey. Turn on medium heat, bring to a boil. Stir occasionally to dissolve the sugar.
 As soon as the mixture boils, turn down the heat a little and close the pan with a lid. Keep for 3-5 minutes. The caramel will turn amber in color.
3. Remove everything from the heat and pour in a thin stream of hot cream. Stir with a whisk. Put on medium heat and stir constantly for another 2 minutes.
Remove from heat and allow to cool slightly.
  Pour into a jar, the same vanilla pod and overnight in the refrigerator so that the caramel is infused and soaked with vanilla flavors. It will thicken several times. To make it liquid, you can just heat it up a little in the microwave.
