1. Put the egg white in a deep bowl.
2. Using a mixer, whisk the protein into a strong foam, for this we start whipping at a minimum speed, gradually moving to the maximum.
3. Sift the powdered sugar through a fine sieve.
4. In the lush protein mass, we gradually introduce powdered sugar without interrupting whipping.
5. At the very end, pour lemon juice and whisk for the final 10 seconds.
