Step-by-step cooking
Step 1:
Sort through the raspberries, removing leaves, tails and debris. Don't wash the berries! If the raspberries are frozen, defrost them in advance, keeping all the juice flowing out.
Step 2:
Put the raspberries in a hermetically sealed container. Mash the berries with a fork or a mashed potato. Pour vinegar over the berries and mix thoroughly. Close the container and leave it in a dark place for 5 days.
Step 3:
Strain the raspberry vinegar through a very thin sieve or a gauze folded in several layers. Bottle and store in a dark place. This vinegar is good to season salads with seafood.
